Recipe of the day Peach chicken salad
Chicken salad is nothing new, but you won't often find peaches as an ingredient. This fresh summer salad combines antioxidant-rich lettuce with red onions and tarragon. Peaches are low in calories and provide a good dose of vitamin C and beta carotene. If you're not a fan of peaches, feel free to replace them with nectarines, plums, berries or any other fruit of your choice.

Ingredients:
- 4 small peaches
- 4 cups spinach
- 2 cups of mixed green salad
- 200 grams chicken breast
- ½ cup sliced red onions
- 1 tablespoon parsley
- 2 tablespoons tarragon leaves
Ingredients for the dressing:
- 2 tablespoons olive oil
- 4 teaspoons white wine vinegar
- Salt and pepper to taste
Preparation:
- Fry the chicken breast in a pan over a medium heat until cooked through.
- Mix the olive oil, white wine vinegar, salt and pepper in a small bowl.
- Place the spinach and lettuce in a large bowl and add the parsley, tarragon, chicken and onions.
- Add the freshly sliced peaches and toss the salad with the dressing.
