If you can make meatballs, then you can also make falafel. This quick and easy recipe is baked, not fried, so you can enjoy this tasty meal without all the extra calories of the original. Add protein-rich cottage cheese tzatziki and you have a balanced and delicious meal that you can enjoy on its own or with wholemeal pita bread for extra carbs and energy.

Tzatziki cottage cheese ingredients
- ½ cup low-fat cottage cheese
- 2 teaspoons of mint leaves
- 1 tablespoon coriander
- 1 clove of garlic, finely chopped
- ½ cucumber, cut into slices
Falafel ingredients
- cup of cooked chickpeas
- 2 cloves of garlic, finely chopped
- ¼ cup coriander
- 2 teaspoons cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- ¼ teaspoon baking powder
- 2 teaspoons lemon juice
Preparation
- For the tzatziki, mix the cottage cheese with the mint, coriander, chopped garlic and cucumber. Leave the mixture to infuse for 30 minutes so that the flavor can fully develop.
- Preheat the oven to 170 degrees.
- Combine the chickpeas, garlic, coriander, cumin, chili powder, salt, baking powder and lemon juice in a blender. Pulse until well combined but not perfectly chopped. Add a little water if necessary to make mixing easier.
- Shape the chickpea mixture into balls about 2.5 centimetres in diameter, place them on a baking tray and bake for 20 minutes.
- Serve the falafel with the tzatziki.
- For a vegan version, you can also use soft tofu instead of cottage cheese.
