What could be a better breakfast than an omelette packed with protein? Nothing! Everyone should learn how to make an omelette. Start with this one and then you can add your own touch as you get more practice.

Ingredients

  • ¼ cup zucchini, cut into slices
  • ¼ cup diced red bell pepper
  • 1 large mushroom
  • 2 whole eggs
  • 2 tablespoons low-fat grated cheese
  • 1 teaspoon crushed red chili flakes
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 wholemeal wheat tortilla

Preparation

  1. In a Teflon skillet over medium heat, sauté zucchini, bell bell pepper and mushroom for 6 to 8 minutes or until vegetables are tender.
  2. In a bowl, mix the beaten eggs, salt, pepper and chili flakes.
  3. Pour the egg mixture into the pan over the roasted vegetables.
  4. Leave to fry for 2 to 3 minutes and then sprinkle over the cheese.
  5. Once the egg has set, fold the omelette in half and fry for a further 3 to 4 minutes.
  6. Place the omelette in the wrap if desired.
