Ingredients
- ¼ cup zucchini, cut into slices
- ¼ cup diced red bell pepper
- 1 large mushroom
- 2 whole eggs
- 2 tablespoons low-fat grated cheese
- 1 teaspoon crushed red chili flakes
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 wholemeal wheat tortilla
Preparation
- In a Teflon skillet over medium heat, sauté zucchini, bell bell pepper and mushroom for 6 to 8 minutes or until vegetables are tender.
- In a bowl, mix the beaten eggs, salt, pepper and chili flakes.
- Pour the egg mixture into the pan over the roasted vegetables.
- Leave to fry for 2 to 3 minutes and then sprinkle over the cheese.
- Once the egg has set, fold the omelette in half and fry for a further 3 to 4 minutes.
- Place the omelette in the wrap if desired.
