Are you looking for a way to add some protein to your breakfast? Here's a delicious protein bread that goes perfectly with your morning cup of coffee.

Preparation time: 30 min

Servings: 3

Ingredients:

  • ½ cup chopped almonds
  • 2 tablespoons natural almond butter
  • 1 whole egg
  • ¼ cup vanilla flavored whey protein powder
  • 2 tablespoons stevia powder
  • 2 tablespoons freshly brewed espresso
  • 1 tablespoon unsweetened apple puree
  • 3 tablespoons chopped pecans

Preparation:

  1. Blend all ingredients except the pecans in a food processor. Add the pecans after blending to maintain their crunchy texture.
  2. Bake the mixture in the oven at 160 degrees for 10 to 15 minutes. Be careful not to exceed 15 minutes. Check the bread after 8 minutes - this is especially true if you are using muffin tins instead of a baking pan. As soon as a knife inserted into the bread comes out clean, the bread is ready.

Enjoy the bread with peanut butter or jam.

Note: You can also use brown rice syrup instead of stevia.
