Ingredients:

  • 2 tablespoons olive oil
  • 1 cup diced red potatoes
  • ¼ cup finely chopped onions
  • 1 pinch of garlic salt
  • 1 teaspoon ground black pepper
  • 8 large egg whites
  • 4 soft whole wheat tortillas

Preparation:

  1. Heat the olive oil in a skillet over medium heat and add the potatoes and onions. Fry the mixture, stirring occasionally, for about 5 minutes or until the onions are soft. Sprinkle the garlic salt and pepper over the mixture.
  2. Add the egg whites and fry, stirring occasionally, until cooked through.
  3. Heat the tortillas in the microwave. Pour the mixture onto the tortillas and roll them up.
  4. Serve the tortillas warm or wrap them in aluminum foil for on the go.
