Ingredients:
- 2 tablespoons olive oil
- 1 cup diced red potatoes
- ¼ cup finely chopped onions
- 1 pinch of garlic salt
- 1 teaspoon ground black pepper
- 8 large egg whites
- 4 soft whole wheat tortillas
Preparation:
- Heat the olive oil in a skillet over medium heat and add the potatoes and onions. Fry the mixture, stirring occasionally, for about 5 minutes or until the onions are soft. Sprinkle the garlic salt and pepper over the mixture.
- Add the egg whites and fry, stirring occasionally, until cooked through.
- Heat the tortillas in the microwave. Pour the mixture onto the tortillas and roll them up.
- Serve the tortillas warm or wrap them in aluminum foil for on the go.
